I'm super lucky my kids love eggs {I have many Mom friend's who kid's don't} because eggs contain 13 essential nutrients, including 6 grams of high-quality protein. Which, when cooking with kids, is sometimes a deal breaker, you know? My other secret ingredient to many of my breakfast casseroles is to add cottage cheese to the cracked eggs. It provides a creaminess and rich flavor that you can't get from other cheeses. Then of course, the hash browns...any potato goes well with eggs!
