Honey has a lot of weird stuff going on. It's a natural antibiotic, and it has very little in it that isn't sugar or water, and the amount of water is too low to allow most microorganisms to grow (water activity of ~.6).

None of this applies to sweetened condensed milk. It has a lot of sugar, but not as much as honey. It's got a low water activity (~.9), but not as low as honey. There are a lot of milk fat and milk solids, and that is an extra-ordinary bacterial breeding ground.

It's hostile enough an environment that I'd probably be willing to eat some that had been out for ~24 hours, but I wouldn't feel safe serving it to anyone else.

have a few recipes like carnitas or honey walnut shrimp that only require 1-2 tsp or condensed milk. even with the small can, we're throwing most of it out. does it freeze ok? any tips for storing the excess?

I've kept it in a jar in the fridge for many, many weeks. Maybe months, actually. The only change I've seen is over time and with more air touching it, it tends to develop sugar crystals. I've never had the slightest evidence of it spoiling.

Try freezing it in whatever portions you know you'll use in a reasonable amount of time. If you know you can go through 1/3rd of a can in a week, portion it into 3 containers, freeze two, and pull them out as you need them. It won't ever freeze solid because of the sugar content, but it should last a few months the in the freezer.

That might allow you to buy a bigger container as well and save a bit of money.

It will probably last longer after opening than you'd guess in a sealed mason jar and refrigerated. If it doesn't smell bad, I would taste a small sample and if it tastes bad, just rinse my mouth. (I find that nearly everything lasts a lot longer than the best before date.)

Sugar is a great preservative, acting much like salt in drawing moisture out of bacteria and killing it. This is how jams work. I would expect condensed milk to last for months.

Three years for me. Needed it for baking and found it in the back of my fridge. It was stored in a glass jar, never used a dirty spoon or had any saliva touch it and aside from crystallization on top, it smelled and tasted fine.

I freeze mine in ice cube trays and then Dino them in a bag, as I need it I pull them out, in then fridge it only keeps 1-2 weeks,

If you need an extra use for it, I like to drizzle a little on grilled pineapple. Soooooo good.

In a mason jar it'll last for a long time (month/s) Remember that food will let you know when it's ready to be thrown.

I always use it as long as I want but of course not exceed the expired date. When I was young, I didn’t even keep it in the fridge. So in order to protect it from ants, I used a plate full of water then placed the condensed milk can in the middle. Lols

I've only ever had it become crumbly, so about a year ago I put one can into three small jars. I stored 2 of them outside the fridge and didn't really think about it.

I opened the second one weeks ago and didn't think anything of it. The third turned yellow-ish though. That made me turn to google and it turns out you're supposed to keep it cool and finish it in two weeks???

My second jar isn't moldy and still tastes and smells good - not sour at all. The color just a bit darker than usual. Would you throw it away?

I'll probably throw both out for now, but this means I have to go back to storing it all in my tiny fridge and then throwing half out because I can't finish it.
